Imagine the best sweet potato pie you've ever had, combined with the best cake you've ever had, mixed with a sweet potato casserole and a cookie crunch - and you just MIGHT have an idea of how amazing this cake is. This one had to be sent from the ancestors because I took a bite and saw the tree of life. I don't know what sense that made but I think you get the point - this is some good cake. Ya'll know I mention my grandmother every now and again in my videos; In my family she's the OG Cakenista. Side note: Imagine my face when she tells me she had a baking business out of her home for years!!! She tells me this as I'm in year 5 of my own baking business. She's not a cupcake lover but she would love this. I say that to say 'good cake, is good cake'. Keep as a cupcake, or double the recipe to turn this into a devour-able layer cake.
I topped these cupcakes with homemade meringue which is basically melted marshmallow or marshmallow fluff, and crushed cookies! I had some vanilla wafers which we know go with almost anything - so why not. I also had biscoff cookies which complimented the sweet potato perfectly and had an amazing crunch.
I don't like to talk too much in the blogs, we know what we came here for (the recipe). But I must say, not only was the cake caking, but the buttercream was definitely present for the party.
With that being said .. some things are just created on the spot. This buttercream was created by adding a little American buttercream to a Swiss meringue buttercream, then adding a little sweet potato, cinnamon, vanilla, and heavy cream. I WISH I could give you an exact recipe, but this right here is just a creation. If you feel uncomfortable creating your own, start with a buttercream base, add a roasted sweet potato (mash first), vanilla extract, and spices. You can't go wrong with the basics.
Ingredients
1/2 cup sweet potato puree or 1 medium sweet potato (preferably fresh roasted sweet potatoes)
1/2 cup buttermilk (or almond milk with 1 tbsp vinegar)
2 1/2 tsp pure vanilla extract
3 tbsp oil
1 C all purpose flour
1/2 C sugar
1 tsp cinnamon
1/2 tsp: nutmeg, ginger
1/2 tsp: salt, baking soda, and baking powder
